These really hit the spot, and they're so guilt free!
Ingredients:
- 1 ripe banana
- 2 eggs (or 4 egg whites)
- 1/2 scoop protein powder (I used vanilla designer whey protein powder) (you can omit)
- splash of unsweetened almond milk (or milk of choice)
- cinnamon
- 1 tbsp. almond butter (or nut butter of choice)
- Put the banana, eggs, protein powder and milk in a blender and blend until smooth. Shake some cinnamon in there if you want, too. Cinnamon is great for your metabolism! If you don't have a blender you can use a food processor, or whisk together.
- Pour the mixture on a hot skillet and shake some cinnamon on top, wait until you see bubbles to flip.
- Put a tbsp of almond butter on the side of the plate, so you don't use more than you measured and put a little bit of almond butter on the bottom of the plate.
- Take the pancakes off one by one and put a little bit of almond butter in between pancakes.
- Top with almond butter (& syrup if you want!)
So yummy, and taste JUST like pancakes, but have nowhere near the amount of calories!
These are so protein packed, even if you omit the protein powder. The eggs and nut butter are filled with protein!
For even fewer calories, you can also blend just two eggs and one banana for banana flavored pancakes!
