My favorite dinner (or lunch) is salad! It's so easy and you can cater it to whatever you are craving. Most of my recent salads have looked pretty much the same. I put a bed of romaine lettuce, and topped with cucumbers, grilled chicken, pop chips, feta cheese, salsa and buffalo cauliflower. (The buffalo cauliflower is a tone it up recipe and can be found here). I just throw it all together and call it a salad. Previously, I have used dressing but since I had salsa in the house I decided to use that instead to cut down on calories and fat!
